Hi friends, just want to say hello and I'm excited to join the forum. I am a home cook who has been using and sharpening Japanese knives for about 10 years. Now I have a small set of knives and stones. Still remember that my first ones were Takeda nakiri and gyuto, and back then the only way to get Takeda was to order directly from him.
