Thanks, I'm in the Southwest. I like mono steels so I've been using a Masakane 210 gyuto a lot, I also have a Silverthorne boning knife and a Fujiwara FKH petty. Those are my most used but I've got about 10-15 others that don't get as much love. I have a few projects that I'm working on too: Zakuri gyuto, a Misono Swedish Santoku that's in good enough condition to use just needs a rehandled, a cheap Kaji-bei ko-deba and an unknown deba I got from eBay. Right now, I would really like to get something from Makoto Kurosaki, but all the carbon ones are sold out everywhere.
