Help decide between these two petty knives

Hello all!


So I decided to treat myself with a brand new knife and given my collection, would like to move forward with a petty knife.

Given the budget (~$120) and what I have seen so far, I am nowcontemplating between two Shigeki Tanaka knives:

Apart from the looks the difference I with steel (G3 vs VG10) is there anything I should think about when making the selection?

I have the 150mm S3 Nash. Easy keeper for price. Came devilishly sharp easy to touch up.

Not so inclined to VG10 but that of S. Tanaka is good. Had a 180mm Gyuto of his at some point in that steel. Needed a resharpening OOTB. Damascus dragging a bit.

I'll go with the Ginsanko. Better steel and cutting feel.

Add: for Shigeki Tanaka petty

I think you would be happy with either.

I have both, and personally I prefer G3 for the steel, but the full grind of the VG10 allows for slightly better cutting performance.

The VG10 is my lady’s knife and she loves it.

Another vote for G3. I have both petty and gyuto from KnS in G3 and they are among my favorites. KnS petty version though had more height - 35mm.
 
I think you shouldn't remove too mamy metal in petty because the blade is small already. Normally only sharpen the primary edge.
But not all petty, depends on the blade profile and is it a wide bevel, mono steel or something else.

I don't think thinning is likely to reduce the indeed questionable life span of a petty. It doesn't affect the blade's width. If kept thin, the contact with the board will be less violent, and board contact with the small contact area is the main source of dulling, I guess. At least, that explains why shorter knives require more sharpening than longer ones.

Before pulling the trigger (on the G3) - any other alternative I need to look at? at this price range?
