Hello everybody. Born in Hamburg and living now a little outside in the country between Luebeck and Hamburg. Being travelling a lot I first got interested in international food, started to cook myself and consequently became interested in kitchen knives about 40 years ago. After retirement and becoming a member in some German knife forums in 2021 I bought my first custom made kitchen knife and learned a lot about knife geometry, different steels and cutting techniques. And that brought me to widen my horizon by signing into this international kitchen knife forum. Looking forward to interesting discussions and insights into kitchen knife news from all over the world! :D
 
Welcome. I still miss the fresh "green Hering" from the city square in Hengelo, NL just over the border from Germany! Those were absolutely awesome. I still wish I could find some in the USA but, no such luck for me in Texas.

@KDSDeluxe: Genau! 👍Das ist die Cap San Lorenzo, 1967 im Südatlantik auf dem Weg nach Rio de Janeiro. Ein Schwesterschiff der Cap San Diego die heute als Museumsschiff im Hamburger Hafen liegt.

@deskjockey: sailors have a deal: we don't eat fish so in case of falling over board they wan't eat us! ;) Just joking, dutchmen sure now how to prepare fish and seafood! But I ate excellent seafood in the USA, guess you have a much wider choice than we have in Northern Europe!👍

@Michael J.R. : I know all of the forums mentioned, in two of them I was also a member a few years ago...

You're in the right place here to broaden your horizons, the point of view, the approaches here are (without judgment) a little different than in the forums you mentioned.

Among other things, you will find that guided systems are not that common here and are not considered to be the most effective solution. As I said, without judgment, the perspectives here are partly different. I can only say for myself that I like it here the best.

I have to add something, one of the things I like best here in the forum is the really pleasant and respectful way the community treats each other here. I haven't seen anything like this on any other forum. And I've met some great people here.
