Just joined and really interested in learning more about different knife types and especially sharpening. My favorite knife is my 210mm Masakage Yuki Gyuto. Big fan of Fujiwaras, Mac, as well as European knives and vintage American knives. In the process of building up my set of Shapton stones and really enjoy getting better at sharpening so I'm hoping to learn a bunch.
