Been lurking around these forums for awhile, and since I finally picked up my first nice knife, I decided to make a post to introduce myself and to share it.
I've been eyeing this for about two years now, finally picked it up yesterday as part of some retail therapy. The guys at Epicurean Edge were great and friendly while I dilly dally'd about which of their 3 Yoshikane Suji's I wanted.
Look forward or getting that factory edge sharpened a little more, but that was the easiest time I've had portioning and trimming my steaks!
