Have finally found out how to consistenly sharpen a knife properly and have an increased interest in cooking so up for buying a half decent set of knives as a starting point, something a step up from the supermarket ones I've always bought in the past so thought it'd be a good place to join.

Suggest you start with one "good" knife, see what you like about it, what you don't, instead if going to a set.

Brilliant and thanks for that, will take a look ... although even since posting I think I've decided I'm probably going to go Victorinox to start with as they seem to be good quality at reasonable prices ... kind of a workhorse which is what I'm really after.

In the same price range you can also get decent carbon steel. Sharpens much easier than soft stainless, while performing at a very different level.
