    Hi Nemo,
    Being in a kitchen environment since I was 14 helping my dad in the pizza place he was working, now I’m 33 and sous chef for the past 4 years. I’m not a home cook but I want call myself a pro either... still so many things to learn and experience.

    Sounds pretty pro to me. On the forums, it's especially important in terms of the volume if work that your knives see.

    Do you know what steel the Halcyion is reclaimed from?

    Is that a Takeda that's lost most of it's KU? Did it get a lot of thinning To look that way?

    The other knife- is it Kurosaki KU?

    Not sure only thing I now is that is wrought iron and the core is 1.2519, the middle one is a Bryan Raquin and the one on the right is a Mazaki 215 kurouchi
