Hello all:

I cook close to 100% of everything I eat, which is a lot of vegetables, which is a lot of chopping. I'm joining because I want to learn the best habits and practices to take better care of my knives, and also perhaps to get some opinions on new acquisitions :).

You'll find lots of good advice on cutting boards and sharpening supplies and technique here. Just avert your eyes from the Japanese natural stones (Jnats) threads for there is a bottomless abyss.

You're in the right place then. While there is a plethora of talk here about boutique Japanese knives and whetstones there's still a lot of folk that are knowledgeable about the basics and are very willing to help a noob. So welcome!
