As probably many of you here, I bought my first special japanese knife and quickly went down the rabbit hole of kitchen knives, after mainly using a Wüsthof for many years.
Now, I also got into taking a look at the German Custom knife world and would like to try a special German carbon steel knife.
The discussions on this forum here are awesome and I would like to participate
