Kikuchiyo is made by the "heir" of Shiraki hamono (私の包丁です。 - @nakagawa_kajiya). He has been re-posting openly on IG for some time now.
Yamatsuka was my first guess as well. Especially the part about ginsan.nuts, I was guessing Yamatsuka
Much easier imo, probably the nicest stainless I have sharpened if my Kono ys doesn’t count (semi stainless)What are yalls experience sharpening Ginsanko? How does it compare to sharpening vg10?
