This is a 240mm gyuto in ginsan from Hitohira, forged by Kikuchiyo (Nakagawa) and sharpened by Ren, with a handle of Ho wood and buffalo horn. This is essentially BNIB, sticker still on. Never sharpened, never stropped, only used for test cuts on a total of 2 onions and 4 carrots. Length: 230mm Heel: 50mm Weight: 171g Soft iron clad Spine and choil eased I bought it from Karasu at a price of 326 euros a short while back: https://karasu-knives.com/products/aaa-050s2-fa240. That page also contains more other specs if you want them. It's a good knife that might benefit from being sharpened a touch, but I'm interested in trying out new stuff and this hasn't made me fall in love with it. Maybe it will do that for someone else. Willing to sell this for 300 euros shipped with the matching saya that I bought (also Hitohira Ho wood).
