The last of the blades which I'm parting with from my Japan trip!

This is an incredibly thin and light example, at only 154g. Truly a specimen! I got this directly from the Hitohira shop in Tokyo, to try side-by-side with my migaki version. They perform pretty much identically, but I chose to keep the migaki for the nice patina I have on it. The cedar handle on this one smells amazing! Used to cut maybe half an onion and a carrot, so essentially BNIB

- 2mm at heel
- 2mm at makers mark
- 1.8mm halfway way down blade
- 1.5mm 3/4 way down blade

I have this knife also and can speak to its awesomeness. I don't have the migaki version, but I've had a lot of tanaka, and this one is a smoker. Surprisingly decent food release for such a thin knife. One of my favorite Tanaka grinds for sure. Edge was solid out of the box too, sticks in my cutting board when I'm too aggressive.
