I took a desk job for the first time in my life, and I don't need these knives so I'm passing them on.
***Disclaimer*** I used these knives in a professional kitchen setting for years. There is normal wear and tear, and they will need to be sharpened. I never used a honing rod with any of these, they were only ever stropped on a 3000 grit shapton to touch up. If you do not want to buy a used product, do not buy these knives.
First up is a comet san-mai 215mm gyuto---500$

w2 core, great cutter, currently needs some love (sharpen+thin) but other than that in great condition.
Up next Ian Haburn 225mm Gyuto 52100 steel.---$700

Best knife I've ever owned, great cutter takes a mean edge. Profile is incredible. makers mark is worn and there is spotting from patina and previous oxidation that can be polished out.
Last but not least Milan big gyuto 260mm c130 steel---$400

One of the best cutters I've ever owned. So light and nimble it feels like a smaller knife. Handles all tasks equally great. If you want to try out his work, this is a good opportunity.
