hi folks

So... chipped my deba today, small one, but it happens, and figured "ah what the hell" and tried to fix it up myself

Spoiler: it is not going to plan. How do i un-**** this?

solved it. it was all burr, i spent wayyyy too long on the 400. ended up getting it to just the point i want it, now i just need to learn how to do it with double bevel knives
 
That’s a burr if I have ever seen one. My cheap single bevel will do the same. I had to grind mine down because the wife chipped it. Lift the shinogi off of the stone just slightly, rounding the edge, edge tailing strokes then the backside flat, repeat until your burr is gone, probably best to finish it on a stone that is not as aggressive as the one you were using to to fix the chip.

yeah i ended up working a full circuit, 400 to buff out the chip, 1000, 2000, and 5000 for a nicer polish on the surface

I guess it looked like the bevel of the knife leads straight to the edge where the burr is formed and there is no microbevel / edge. Not having it on a deba will probably lead to another massive chip soon.

Also, looking at where the massive burr formed, it kinda seems like that the edge of the knife is grinding inwards due to the straight thinning of the bevel itself possibly. this could lead to a overgrind that is hard to fix for single bevels... I thought you were referring to this as how to I fix it and not the burr...

ah i see, so moreso an issue with the original edge? it was kind of a cheap knife so i wasn't expecting it to be perfect, i take it i should just be more careful with this one?

I think for the microbevel you can just put one on fairly easily.

for the overgrind, maybe if you avoid thinning that section while thinning the tip and heel side the problem may resolve itself over time. its just a bit harder to sharpen if you can't follow the original bevel anymore because you thinned down one section of it more than the others... hopefully that makes sense... there are people who are way more technical than me(in skill and terminology) here, but just trying to describe what I would do to resolve it over time.

single bevels are easy if you kind of follow the original grind over time, once you've altered that and start following the altered bevel is when you get into trouble it seems.
