I'm looking for a good tutorial for those of us who are just starting out on this subject of sharpening knives. I would like to know about the importance of the order of the stones in sharpening, what would be the best progression.

It can be a book, a video, etc.

Thank you, it is that a beginner does not have many doubts.
 
Definitely Peter Nowlan and Jon from Japanese knife imports...both very solid information and techniques...both present in an understandable and no nonsense manner and have similar ways of sharpening...you can't go wrong with them... knifewear also has good videos...but they're trying to be shall we say a little more off the wall...more rock and roll which is fine if you're into that..

One word of caution though...in your quest to learn sharpening don't go trying out every method of sharpening at the beginning... watching every video on YouTube...it will only slow your progress...stay with one method until you can achieve consistently achievable results...then go nuts...you see a different way to sharpen and want to try it out go for it... you'll have a base of knowledge and ability that will allow you to better understand and evaluate what you're seeing/doing ...

Ultimately...have fun with it and don't try to chase that ultimate edge right out of the gatew...as long as the edge is sharper than when you started...it's all good...and soon enough you'll end up where you want to be...

That and as long as you have stones that come from one of the major stone companies you can't go wrong there either...(on here and elsewhere you'll see people praise or pan stones all the time...)...a different or higher grit stone won't make much difference without good techniques...

Best of luck...you need and help or advice don't hesitate to ask on the forum... there is a wealth of knowledge that resides in the members...most of whom are more than happy to help (some can be a bit salty if you don't google it first...as most issues that crop up when one first starts sharpening already have a thread...but they'll do nothing worse than point that out to you...)

So... WOW... ended up longer than expected...

Still like much Chad Ward's An Edge in the Kitchen. A bit outdated, perhaps, but great about the very basics. And I like his style. A written text works much better with me than a spoken lesson, but that is highly individual.

When you start practicing, it will make your life easier if you can get a cheap carbon knife and a decent stone (with good feedback) to start with. Cheap carbon knives sharpen much more easily that cheap stainless. It will save you questions like 'Am I not doing the right thing or is the knife just difficult to sharpen.
 
A cheap 60x loupe will help you get visual feedback on why that burr just isn’t happening (you’re still on the shoulder!)

A USB microscope will do the same with less chance of stabbing yourself in the eyeball.

Your phone may have an angle guide built in. This is my “measure” app.
