Impulse Buy: Twin Cermax 7" Santoku

Amazon had these on sale a few days ago for $130 so I bought one on impulse. It arrived today. OOTB sharpness is the best I've seen. The bevels are asymmetric, probably 90-10, which may help. I have no experience with asymmetric bevels so this will be interesting. Anybody have any experience with these?

I have a modified twin cermax. I like it a lot although it is somewhat big-bellied. I haven't had any problems with the knife. It takes a nice edge and holds it a long time.

I have a twin cermax gyuto. Its a nice blade. Good steel. Has taken me many hours to flip the edge for a lefty. Hard steel!

I likewise have a gyuto and absolutely love it. Not the nimblest, but very serviceable and holds an edge through thick and thin.
