The only advantage I see is you can clean your slot out, maybe? I guess it gets dusty in there.

That's true. You could have exactly the slots you want and change them around if your set changes without having to get a completely new block.

Yes and the slot in the center could be removable and the slides could be that way to so up down side to side movement

I just assumed that they would sell the block and slots separately, so you can mix-and-match to your liking. A 4-slotter for steak knives, a full-length slot for cleavers, etc.
