Hi! I'm a longtime serious home cook; until fairly recently I've been satisfied with my various German knives. But in recent years I've started getting into Japanese and other blades. I've mainly been reading r/chefknives, but now I'm looking around here.
With some trepidation, to be perfectly honest, because I feel like I already have more good knives than I really need, and while yes, it's fun to collect, I don't want to end up with a million great knives that I rarely use.
With that said: I'm a vegetarian so I'm naturally a big nakiri fan, and I have correspondingly little interest in deba, sujihiki, etc.
I'm very interested in getting better at sharpening, but I'm not good at mechanical things in general, so this doesn't come naturally to me. I have some good stones and I've watched all the videos but I still feel like I don't know what I'm doing.
I guess that's it! Not sure how much I'll be able to contribute here, because I don't know enough and don't want to merely ask stupid questions, but I've already been learning a lot from things here, and I'm looking forward to being a part of it.
