It's been a while since ive chased after a Japanese knife but isamitsu has peeked my interest. Ive been thinking about placing an order direct but haven't fully committed to that idea just yet. So im gonna see what this turns up in terms of what I'm after and price.

Looking for a gyuto, iron clad 210-240 either core steels considered. Wa handle over western.....

Yes he did, 7-10 months. I ordered an AS iron clad gyuto with hand finish, WA handled (pentagon). I sort of got the sense it could be quicker but that’s the timeline I was given. Overall a pleasure to work with Gaku. The first knife I’ve ordered from Japan in that way.
