There are two knives from a professional cooker, need a hand identify them!

The first 3 pics are for the first knife, and the second 3 for the second knife.

Also have some questions willing to ask:
1.why there are some black and rusty stains on the first knife? What caused them? (I was afraid to remove them by myself damage the knife as a new player into the knife area)
2. what does it say on the first knife? (别上&登绿, another person from the forum told me that 别上means high quality, I m wondering what are other characters for other quality?)
3. mhm I guess I only have two questions at this moment XD

Any reply or help is appreciated!

First one says registration, Sakai takayuki, specially made. It's carbon steel. Resembles a lot of knives made in seki. Monosteel. Black spots are pitting or old inactive rust. You can mess with it or remove it, not big deal. The knife is 2-3mm thick, rust is maybe 0.2mm thick. . . Maybe. Comes from not drying the knife completely, but it's normal wear.

Second one looks like made by Ryusen in echizen and probably is vg 10 with layered cladding. First kanji is seki, last kanji is saku or made. Middle four kanji I'd have to look up.

Kanji for quality? None really exist necessarily. Sometimes things are stamped... Sometimes they're not. Hon-tanren, josaku, tokujo. These stamps are a Sakai thing mainly, and knives without the stamps can be just as good. . . It's a for-consumers marketing thing mainly.

别上, short for separately made (I think), a decent knife, usually entry level professional stuff has this. Single bevels have this stamp sometimes too.

Not 登绿, but it's 登録, registration, short for registered trademark, means that, a trademark

pps. I've asked one of my friend who knows a bit of japanese kanji

he sent me "made by sekiju kanjiro" but weirdly I did not found any useful info on google

関 住 唯知郎(Ichiro or Yuichiro) 作
唯知郎 probably means Hattori Ichiro(服部唯知郎).
The first kanji is Seki, and the second kanji means 'to reside.' These represent Ichiro's place of residence.

OMG that was such clear thank you so much!
ps. I thought the first five kanji are for the name of the maker XD
pps. Even those I still can not find a specific website of this knife, any idea for the model number or steel type by any chance?

I found this only
https://hattoricollector.com/wp-content/uploads/2015/09/hd30cl.jpg

as described as "HD Series VG10 Nickel Stainless 63 layer damascus" but still not any website

The name 唯知郎 is quite rare, and even when I looked it up, there was very little information available about it.
Its super rare and described as "A Damascus series made in collaboration with Ryusen, no longer available."
I think its discontinued :(

They looks soooooooooo similar!!!

OMG 25 years ago and is it still having good condition right now ? :O

Saying the handle is made of Pakka wood!!! I thought thats plastic for all the black handles
Protect the endangered Pakka tree.

Pakka wood generally refers to the ubiquitous plastic-ky stabilized black scales on Japanese yo factory knives. One of my absolute favorite handle materials to be honest. Grippy and indestructible
