Hello KKF

This Itsuo Doi from Sakai Takayuki is New in box. Never used nor sharpened. Not too sure if there is Doi’s stamp at the tang. Originally from chefknives2go but got it from local trade. Comes with magnolia wood saya and ebony handle (still got plastic wrapped)

Itsuo's blue 2 is underrated IMO - consequence of being raised in the shadow of a legend I suppose. Abrades and polishes like lower hardness steel (ie - easily) but deburrs and takes the crispy edge of something brutally hard. Pretty ideal stuff in that it feels super buttery and easy to sharpen but takes a very, very clean edge easily also. GLWS!

Can confirm Itsuo, both Keijiro and Togashi used/ use different stamps.

Itsuo‘s heat treatment is exactly the same as Keijiro’s. 65 HRC, little annealing, not much tempering. Fairly coarse grain and high hardness yield bity edges.

My local sharpener swears that Doi's Blue 2 is one of the best out there right now. He was complimentary, and he usually isn't.
