I love hikarimono. I really love iwashi (aka sardines). Getting good sardines can be tricky. They get soft and mushy really fast so finding good ones is a real treat. I decided to make these beauties in to iwashi fry. These were filleted by hand (sorry kkf, no knife), breaded with flour, egg, and nama panko. Then deep fried and finished with a nice shio. With sardines this good, no sauce needed!
