Hello everyone,

I hope I'm posting this in the right sub forum.

What are some Japanese knives which use the 14C28N steel? I'm talking about either mass produced products or commonly available hand-made ones, but not customs.

I know the Culilux Kobe uses it - which is at least a Japanese knife by shape - but it doesn't seem to be very common in actual Japanese knives.

I'm not sure which other names the steel goes by, so maybe I've seen several knives using it without realizing.

Ginsanko is similar, fwiw. Those are more available.
 
Yeah, that steel is common. I was just wondering if 14C28N is used in Japanese-made kitchen knives at all.
It's not all that common in kitchen knives anywhere, afaik. I know of one maker out of Brazil that uses it as standard and Civivi just released one, too, but really can't think of anything else that I've seen in my time on the internet. 14C28N is often described as AEB-L with nitrogen and somewhat improved corrosion resistance so 'Swedish stainless' is another option unless you're looking for exactly 14C28N for whatever reason.
 
PS60 is a japanese version of abe-l as far as I know, so that may be of interest.

You mean the AEB-H and Ginsan? They don’t match 14C28N, 14C28N is more of a development of 12C27.
Right, lol. It's a weird semantic argument. I didn't claim it was an analogue or anything that precise.

I just don’t think Ginsanko is similar tho, if anything it’s more similar to 440C than 14C28N
Ginsanko is more AEB-H, coarser carbide and less corrosion resistant. As far as I know it’s not used a lot in Japan, or really in any mass production knives for that matter.

Tho 2 French brand use it, K Sabatier and Coyon
