Picked this up last year directly from Joel. Since then I picked up a smaller Gyuto and have a custom coming from him also. I find I prefer Sakai lasers to middleweight/workhorse knives.
Been used for prepping in a professional setting very lightly. Mainly mirepoix and small veggie prep. Has been sharpened twice with an Aizu. Patina has been removed with a Narutaki fingerstone. I will include a small finger stone to maintain finish. This knife was not shipped to me in a box and I do not have a spare.
