"Farmstead Gyuto" by ABS MS Jordan LaMothe
Specs: 80CRV2 mono, 200mm x 50mm 155gr Dark Curly Maple handle with phenolic composite bolster with bronze spacer
Really on the fence with this one but with the amount of knives I have coming in I need to keep passing some along, no matter how much I like them.
I got this through a newsletter entry earlier this summer and have been using it in my kitchen ever since. Really beautifully executed blade and handle, which I expected. With not much info on him around the forum, I did not know what to expect with regards to the performance. I think the geometry on this knife was very well done, a good amount of convexity and the performance is really higher than I was expecting for such a short blade. I like this knife for many reasons, but it's really just a classy knife, with an ultra comfortable handle that preforms well. It also stands out from many other knifes I've held and used over the years. I paid $850. Gonna list it at$700 $650 shipped. Would consider trades form other American Blade smiths or magnacut gyuto
