Here is an excellent bundle from Y. Tanaka and Kagekiyo. Everyone who works on this line is a certified master, including their lacquer craftsmen. Their attention to detail and F&F is really top drawer. They pay special attention to the handles too. The lacquer is a Nuri lacquer that remains tacky when wet. Both knives come with magnetic lacquered sayas.
The 1st is a Urushi Akaro with a deep red lacquer handle. This is one of the thinnest gyutos BTE that I have, 0.30 mm. But it's Y. Tanaka's Shiro 1. Paid $450, used on 2ish meals. Bought here but was BNIB, no sharpening, only stropping. 230 x 50 on the nose. 154g.
The 2nd is the Urushi Kataro series with a piano black lacquer atop natural Walnut and a carbon clad Aogami 1 blade. This one is still quite thin BTE but not quite as thin as the shiro. Paid $500 and I am the only owner. Stropped only. 234 x 50. 166g.
