Pulled the trigger on a 200 mm kanetsune gyuto aogami#2 with the nashiji finish from BT-japan ... it’s a clad knife .. my first carbon the wifey has a set of Victorinox stainless and I have high hopes for the new addition... I enjoy reading the forums ..sharpening stuff , blacksmith welding , gold fossicking are a few of my hobbies
