  • Kikuchiyo (Nakagawa) x Izo (Myojin) 240mm G3 Gyuto (BNIB) - 229mm x 51.4mm, 165g
Stunning knife and very thin behind the edge. Laser or borderline laser. A light weight stainless option that some people analogise with the FM (except stainless). Comes with an elegant and pleasant smelling cedar handle with black buffalo horn. Top tier! $550 $499USD $490USD plus shipping.

  • Tetsujin 300mm K-Tip B2 Gyuto (BNIB) - 290mm x 58.5mm, 331g
Has a gorgeous kasumi finish and -an incredible hamaguri grind, showing the best of myojin’s work when he has enough steel and height to work with! I replaced the handle with a one made from jet black mun ebony and white / ivory coloured horn (that contains a stunning pattern), which itself is worth a reasonable sum! It brings a much better balance to the knife, which, despite its size, is very comfortable and versatile. Nevertheless, a big show stopper, not for the faint of heart. 600USD $580USD $565USD $550USD plus shipping.

  • Yamato Oboro W2 225mm Gyuto - 214mm x 52mm, 155g
Beautifully finished knife with a well-executed kasumi finish in the cladding and gloss on the core steel. The smith and sharpener are undisclosed; commissioned by Kaneshige, the same patent company as Konosuke. It’s got a fantastic hamaguri / convex grind that is a bit more robust and confident than the average Sakai style, but still very thin behind the edge and an outstanding cutter. The core steel feels very hard, particularly for W2. Absolutely top tier fit and finish - rounded polish and spine and great fit up. Has been touched up (high grit only) once as the factory edge was not great - is now paper towel cutting sharp and ready for service. Has been used in a home environment for ~5 meals. The patina is pretty attractive, functional and stable, so planning to leave it unless the buyer wants me to remove it. Comes with a d-shaped burnt chestnut and black horn handle. $245 plus shipping. Well the one for sale is BnIB, so I can’t say about this particular knife, but my 270mm is not especially sticky. It has a mature patina and is not wafer thin, so there is some convexity to assist with release on these particular Myojin grinds.
 
Dropping the price on the tetsujin to $590USD plus shipping. Negotiable for feelers payment methods.

The handle is really something special and so is the grind! If you want to try a large knife, that’s the one. ~330g distributed across ~460mm is really manageable - happy to keep this one if it doesn’t sell soon!
 
A bit surprised that the Izo hasn’t moved. Perhaps the stamp premium in FMs is real. The Izo is substantially similar to an FM (not my words - comes from many owners of both knives to whom I’ve spoken) but stainless! It’s made by an arguably equally great smith (Nakagawa) and same sharpener (Myojin) with a premium Japanese cedar wood handle (smells incredible, generally unavailable int he west). Vexed but not unhappy; I am happy to keep this one as a stainless option so will leave it up for a little longer but happy to withdraw it and the Tetsujin if there’s no interest and use / gift them. Will give them until Sunday. Please reach out if you’re interested! Happy to offer better rate for fee friendly payment platform or a package deal with a substantial discount.
 
Just chipping in as per BST rules to say that I have a Kikuchiyo x Izo 240mm Gyuto as the one JPAU is selling and it is an excellent knife. All geared towards cutting performance and, in my humble opinion, one of if not the best Nakagawa x Myojin rendition on the market.
