Kippington 255 mm WorkHorse 1095 steel Honyaki gyuto with custom handle made with ebony wood and mammoth tooth spacer (Used in home cooking environment, sharpened about 3 times,but from a friend here, I been used it on pro sushi restaurant for 2 months , never sharped by me and one strop for one time on #8000 whetstone),still very sharp!
The handle was have a tiny chip on it when I got , and it has been fixed and very smooth now , thanks for Jackson ‘s hard work !!
Only try to sell it then go try the 270mm gyuto 52100 steel on kippington make!
