I have 4 Kato to sell. I spent a lot of time money and effort to build up a small collection of his knives, and once it was completed I realized that I’d never use them due to the cost. I wrestled with it for a bit, but I’m not in the financial position to justify keeping these.

210 Sujihiki:
Weight: 122g
Edge Length: 211mm
Heel height: 39mm
Taper heel, mid, tip: 3.7 - 1.8 - .09
Handle: Ho wood octagonal

Notes - haven’t seen many of these around. Full convex and thin grind especially towards the edge. Crazy taper. The Kato grind on his migaki seems geared towards performance.

240mm Gyuto:
Weight: 202g
Edge length: 233mm
Heel height: 50mm
Taper Heel, mid, tip: 5.5 - 2.2 - .09
Handle: Ho wood octagonal

Notes: Best taper I’ve ever seen on a knife. Insane. Same as the suji in that it has a thin grind towards the edge. Performance geared. It came with some fine scratches near the kanji which you can catch in certain lighting.

Notes: I see why people love these. Perfect combination of rustic characteristics paired with precise craftsmanship. Very forward balanced and stiff.

255mm Gyuto:
Weight: 227g
Edge Length: 252mm
Heel Height: 52.5mm
Taper mid, heel, tip: 5.3 - 2.2 - 1.5
Handle: Ho wood D-shape

Notes: Very commanding in its weight and size. I haven’t seen one of his standard gyuto with these specs before. Handle is very comfortable.
