I really like my tetsujin, greater cutter with good food release, the iron cladding is super reactive and makes it a lot of fun to put a patina on
Agree, the cladding is super reactive but not a big fan of it. I need to baby it otherwise it develops rusts super quick.

From a cutting performance and F&F POV this thing is one the best values out there.

And gone! That was quick. Apparently the hype is out there for these guys now.

Sidenote - Love the tallboi eddworks posted above. Will have to make one of those as my next custom with him.

I never got to try one of the thicker FM/MM/Fujiyamas, but compared to the thin Fujiyama I briefly owned it easily matched that knife in f+f and cutting performance, and actually I preferred the more middleweight grind and lower profile of the Tetsujin.

I’m genuinely surprised it’s not the first thing people who want a Kono go for as an alternative that ticks all the boxes, and is available, and is much cheaper than a Kono from BST.

Tetsujin is in between the thick FM (baby kaiju) and regular FM spinewise, but probably closer to regular FM. Difference between thick FM and regular FM is not subtle at all.

But it doesn't have the kono rectangle stamp, which is more important than anything else

I was getting rust spots appear out of nowhere on my Tetsujin kasumi gyuto but I think the finish is part of the problem on these. I sanded off the kasumi finish and no more problems.

Lots of Tetsujin available at ProTooling by the way.

I'm thinking on grabbing another one to be honest. it's a great knife.

I don't know if this is the right place to ask, but does modern cooking offers any discount to forum members?

Surprised by the drop. Expensive yes but I think fair for all the work that goes into something like this. Could be a one and done chef knife.

it's crazy but on occasion I look at something and think "wow that's so expensive" and "ok but that's incredibly fair" at the same time I think that particular Milan qualifies.

I have wanted one of Milan's knives for a long time and if the time were right I could see shelling out that kinda cash but it really would have to be my perfect Milan, not someone else's.

Anyone looking for a Tanaka x Kyuzo Bunka, here is one currently available. Will probably go quick. I have been using one professionally 5 days a week for over a year now and it holds it own for most tasks with grace.

I really want to buy it especially after the price drop but I’m about the head to Thailand for a month so I’m trying to be reasonable with spending.

AKA- someone else buy it before I screw up my travel budget! 😂

Given the choice between a Kato WH or yo shig and that Milan nogent I know which I’m choosing lol. I see the value in this blade

But yeah, it’s expensive and unique blade. Surprised by the price drop and dubious that it’ll last the week.
Oddly enough what I say in my head is “those are Kato prices” I’d rather take a Kato

Love the handle concept. The ultimate Nogent knife.
Man that price is steep on the milan. *not saying it’s not justified. Just a lot in one go.

300g sounds fun, love my Migaki version, tho the grind seems more Wat pro territory for this one
like!

should be super forward balanced, by SS-clad 210 already felt like that... (nothing wrong with that, push cutting machine!)

For that kind of weight, I'd want the handle against the blade (no neck). I find with that kind of weight and pinch grip, I want my hand on the handle, not on the neck.
