Looks great but I wished they kept the birch bark bolster. Double birch ftw!Darn that’s attractive
A high-performance favorite amongst culinary professionals and kitchen knife enthusiast. The Birch and Bevel Carbon Gyuto is simple yet elegant with a combination of Nashiji texture at the spine and satin polished bevels.birchandbevel.com
Interesting video on a few knives through Ivan and Tosho coming in the future
Interesting….That’s the dude that made the table knives for the noma pop up. He also regularly has a booth on Kyoto handicraft markets.
Does Ivan have any proper grinding wheel?
Oh btw I found the yamada or whatever wrought iron knives in Kyoto. They sell for half the price they are on bst and the grinds are 4/10. Wrought is cool and all but who needs a knife ground like an axe?
