    The height at the heel is approx 48.5mm, the spine thickness approx 3.25 at the handle, 2mm half way, and 1.7mm 50mm from the spine. No flex on the spine, however, the cross-section of the knife is very thin. The knife feels very solid in the hand.

    jet black bog oak... man that is one sexy handle, might have just changed my opinion on aftermarket ones.
    also, what ecchef said, would be quite the ultimate line knife.

    Bog oak offers a pretty good grip, even stabilized. I also want to get out of using unsustainable growth woods altogether. I use bog oak as alternative to ebony, blackwood and other tropical hardwoods.

    210mm is sold and 225mm is pending.

    240mm gyuto 52100 convex ground with cocobolo handle an saya.
    This knife's food separation was so good, that I kept it in my shop to benchmark my other convex ground knives to it. Profile between Masamoto and Shigefusa, making it well suited for professional use. Blade heavy. Comes with saya.
    Asking $550 plus shipping.

    225mm 52100 S -grind gyuto with amboyna handle. This knife is a laser, with a stiff spine. Light and nimble and with excellent food separation. Handle is an top grade amboyna. Leather or wood saya can be arranged. Balance point is about 5/8 forward from the handle.
    Alsking $550 plus shipping (before upgrades).

    240mm gyuto is pending.

    Running a special on the 225mm S grind gyuto. Throwing in a leather saya for free with that knife. The saya will be made from thick vegetable tanned leather with a tight fit for the blade. It will be and colored to match the color/tone of the handle. Will come with pin that is attached to the saya, so no chance of losing it. It will feature Burnished edges and beautiful stitching. In terms of protecting the blade, it will be on part with wood. I also incorporated holes in the design for decoration but also for ventilation .

    Lefty asymmetric grind, 52100 differentially heat treated. 230mm on the edge.
    I can offer this blade with no handle, with basic wood (cocobolo/ziricote) handle or with an upgrade wood handle. Saya is optional.

    montezuma, marko's heat treat of 52100 is sooooooooooo much better than any aeb-l including devin thomas's version whom is the mentor of marko. plus it is almost semi-stainless, hardly reactive at all. just get the knife.

    225mm gyuto 52100, S grind with an octagonal amboyna handle. Light and nimble, yet stiff on the spine, this knife would make a perfect precision cutter. Anybody with arthritis in their hands?

    Comes with a handcrafted leather saya. The saya features exact fit, holes for air circulation, attached pin, hand-painted "wood grain", hand-burnished edges. Same design as my wooden sayas. In fact, it will protect the knife on par with a wooden saya.

    Leather sayas will be standard for curved knives like scimitars, breaking knives, curving boning knives. I am still experimenting with designs, but I think I will offer leather sayas for gyutos and other knives as well, along with wooden sayas.

    Asking $550 shipped.

    230 Lefty gyuto in 52100 w/differential HT, lefty assymetric grind, with handle TBD is still available. This one can be purchased without a handle, with your handle installed, with a basic handle or an upgrade handle.

    Have following knives for sale. Handle customization is welcome.

    250mm 52100 honyaki (differentially heat-treated) gyuto
    275-285mm 52100 honyaksujii (differentially heat-treated)
    275-300mm 52100 honyaki (differentially heat-treated) suji
    2 x 230mm AEB-L gyutos

    Gyutos are workhorse, ground heavy convex in mid-section, but thin above the edge. Sujis can be either ground convex, or asymmetrically convex.

    I am very happy how these knives came out. Would love them to go to pros, so they could be worked hard.

    Two new knives for sale

    2 x 240-250mm Ladder Damascus Gyuto in 52100. These are ground convex and I would consider them workhorses, however, they can be modified to all-around cutters (a bit thinner and lighter). Handle customization and sayas are optional. Profiles are derived from Masamoto's.

    End prices will depend on custom options. For base pricing, mono-steel convex is $1.8/mm, mono-steel asymmetric convex is $2/mm, S-grind is $2.5/mm and carbon Damascus in convex is $4/mm. Below is the picture of the 52100 blank deferentially heat treated right after the quench. 52100 is deep hardening steel so the hamon is not going to be as visible as on Blue/White or W2, but the hardness at the spine is at about 50RC and it increases toward the edge. Past the clayed area, the harddness is at about 63RC.

    These are not etched yet, as I still might modify the grind and profile a little bit, but the Damascus pattern looks similar to the pattern on the Devin's knife below, though the billets were forged by John Thomas, Devin's son.
