I have decided that I would like to go the route of getting a 300mm Konosuke Sujihiki. But everywhere I look there is only the 300mm in HD which is a semi stainless. Do they make it in a carbon steel? Or is it recommended to get the HD and be happy as a clam.

Yes, they do. I have a 300 white#2 that I got from special request through Jon about a year ago...I think it took about 6 weeks or so from ordering date.
If you look at some of my older posts here and on FF, you can see how much I love this thing. I also have a 270 HD, and I'm still not sure which one I like more.
