I am used to knives with more workhores grinds. Food sticks to the blade on this much more than my other knives so I have not been using it.

Think this is the stock choil shot for this knife, could get some sticking yes just cuz it's thin but looks like an assassin smooth cutter. GLWS!

FWIW I love the sanjo mid-weights and there are only two reasons I am not buying this knife right now: (1) I already have too many of these dang sanjos; and (2) I use a mag bar so have no need to buy a package that includes a saya.

But this is a truly beautiful specimen and I'm sure someone who hasn't already OD'd on sanjo gyutos and who wants a gyuto/saya package will snap it up soon enough. GLWS!

To be crystal clear, that is one inch from the tip, not one centimeter, right? I imagine this thing gets much, much thinner than 1.3 mm when you're just 1cm out from the tip.

Yes it is 1 inch from the tip. You are getting into the bevel grind there and it quickly goes to nothing.
