KU question

There varying degrees of durability with ku finishes. I’ve had a few that seemed to wipe off in a few uses (looking at you Munetoshi) and others that still look great after countless uses. Im not sure how a maker achieves one vs the other.
 
It is normal....But I have No idea why anyone would want forge scale touching your food.
 
Those smooth, pretty, even KU finishes you see on knives now days is not forge scaling, it's a fake finish applied after forging. There may be only a few, at best, knives out there that actually have a natural KU finish.
