So my Takeda gyuto at the heel the grind is off a little. Today I decided to even it out a bit, so I used some painters tape to as a guide to know how far I wanted to go. This was a mistake the painters tape pulled the ku finish right off. Didn’t see much of a choice so took some 0000 steel wool and took off the rest. Live and learn.

It looks like you just took off some of the protective lacquer. Maybe it's just the lighting in the picture but the KU looks intact.

I had a similar thing happen while thinning a Takeda gyuto using the so-called "Lucasfur method" of taping the spine. Tape removed much of the KU resulting in an uneven finish. I don't recommend applying tape to a Takeda.
