Ever since watching America's Test Kitchen smoke a brisket on a Weber Kettle,
I've been kinda obsessed with what you can do with them (charcoal kettles).
I doubt I use my gas grill more than once a month since acquiring one.

Kettle grills are cool and all, but you can achieve similar results with a gas heat source. I do love lamb over charcoal though...

Agreed.
For me, pulling off a well executed piece of protein using charcoal is just infinitely more satisfying.
No idea why, but well worth the additional effort imo.
 
If you’re enjoying your weber I would recommend looking into a cast iron cooking grate. They can be a bit pricey but I don’t regret mine. No sticking, holds heat very well and just overall better performance.
 
I have enjoyed grilling very much lately. I don't have a butcher near by, but my next goal is not leg, but a slow cooked lamb shoulder.....
 
I've been meaning to try that recipe! I hate frying stuff, makes the whole house smell like oil and I detest that smell. My outdoor propane burner is on its way out too so I'm glad to see this works well.
it only works with bone in thighs. for some reason. even drumsticks were MEH.
