What improvements do you want from your current knife?
Just better aesthetics. I love the design of the one on their site, but they changed it without updating the photos online, and it now has a blue handle instead of matte black. I like the shape and I like the engraving on it. Real shame, but if there aren’t many other good looking options, I may just rehandle it. I’m not sure if Inox is a great metal, so if there are better performing options, that would be neat. I’d like a simple one piece ebony handle if possible, but if not, dark is preferred.

Do you sharpen your own knives?
Yes, though this is my first single bevel and I’ll have to pick up a cheap one to practice on probably
Basically just looking for a good-enough, pretty stainless yanagi with a dark handle. Stainless is unfortunately a must because I do not like patina or maintenance. Thanks in advance!
