Thanks, they look super rustic and I would be doubtful about the steel/HT.

General comment - apparently, there were cleavers just in the right size available in the past in TW with stainless cladding and V-Toku2 core steel, but have since been discontinued.

From the current standpoint the Gesshin stainless-clad-white2 remains the main candidate.
 
Didn't someone once mention that shigeki tanka cleavers are a thing but that they're shorter and smaller than most cleavers? I can't find the link or the post but it might be an option
