Any body know of a good local professional sharpener in the San Diego area?

From my limited experience none of the ones in SD are what I would call "professional sharpeners" - especially now having met/worked with Jon and Dave ... they are at best mechanical tool operators / types (using wheels, grinders, etc.) I don't think any even use variable speed belts ... From my perspective they are way too aggressive and too much metal is removed ... This issue is a big part of the reason I started down my knife sharpening path (Chef, EdgePro, stones ...) in the early 2000's ...

FWIW (not much) I haven't met TK59 as I believe he has taken a more modest involvement to the forum, etc. so can't speak to his services ...

I saw him a couple of months ago, I don't think he will sharpen anything anytime soon. Besides the obvious point, why do you need a pro sharpener? lessons? problems with a knife? If I'm in SD anytime soon I could give you a hand.
