I use a diamond plate for thinning and re profiling, but I hate the feedback. Would anyone be able to recommend a top quality low grit stone?

Shapton kuromaku 220 i haved one.

Soft stone, good to use but have to keep flatting, next time i want to buy shapton diamond ..

I have the Shapton Pro/Kuromaku 120 (splash).

I've read good things about the Ñubatama Black 180 (soak).

120 doesn't dish much. I've only used it so far on a stainless Chinese cleaver though. I'd say it's almost Crystolon stones hard.

Aratokun 220 is the best to me. Fast cutting, good feedback, low price and decent hardness, but requires soaking. Shapton pro 320 has aslo good feedback and slightly harder than Shapton 220. Kuromaku 120 is not bad but flattening is a pain.
