So apparently I'm not a nakiri guy. I really wanted to keep this, but I prefer my gyutos. The Sheffcut core steel is CRAZY sharp. Used lightly a few times. Never sharpened. Handle is ringed gidgee.

I’ve been thoroughly impressed with Travis’s work and his Sheffcut is exceptional. Very hard and keen like a good w1. Gets astonishingly sharp and stays sharp even after acidic ingredients. I’ve been comparing with my isamitsu w1 and prefer Travis’s sheffcut to both sharpen and use. Buyer beware, this will blow you away.

Just adding on the dirt/rust.
I have a funayaki from Lucid with different core and wrought iron. It has the same "dirt" and I have seen no indication that this is rust.

Sheffcut is super slept on. I have a mini gyuto from Northside knives and it might be one of my favorite steels I’ve used.

Sheffcut is basically 26c3 with a tiny bit of niobium added for grain refinement. Beefy looking beast. glws!
