I think a Kagekiyo Ginsan would be a great passaround. It is a great collaboration with a good looking grind. I haven’t seen anything like it in a pass around. I’d imagine it would get a ton or requests…I’d be in line ASAP.
One of the best all-around, low-maintenance gyutos I've tried. Performant, not too fragile, great midweight grind and feel, very sensible dimensions (230x50). Kinda like the weird walnut handles too. IME maybe the best J-knife option for a one and done stainless gyuto?
