Hello all,

I just got a vintage Masakane SK 180mm gyuto. Upon examination it seems like it was sharpened only on the right side. Is this on all of them? Should I keep it like that or should I sharpen it 50/50? Any advice is welcome. I’m sorry if this is a novice question and if it was answered before… Thank you all..
 
Thank you for your answer. What made me question it, is the fact that to my untrained eye it looks like 100/0. That might be wrong as I have t examined it with a loupe, but to the naked eye it seems so. Would you leave it like that? Would that support an edge?

It's not uncommon for vintage Yo monos from Japan, at least IME. Yes, it'll hold an edge just fine. If you want to leave it that way is up to the user, but unless you're planning to only do specialty work with it (e.g. butchery tasks) I'd put at least a small bevel on the LH side to counteract steering.
 
Thank you! As I’m not know for my patience, I ended up using a Cretan stone to put a slight bevel on the left side like you suggested. I kept the original bevel as is. I wasn’t planning on doing this but when deburring it happened on its own… I’m no expert in honing but it allows me to cut a cheap paper towel on pulling without a problem. I love those Cretan stones… such a wide range….
