Santoku is the most widespread form of Japanese kitchen knife, as it is very easy to work with. In Japanese, San means the number three, which is why it was named the knife of the three virtues - it will easily prepare vegetable, fish and meat dishes using different cutting techniques. The blade is slightly wider and will shine especially when chopping vegetables on the kitchen board.
The double-sided ground blade is forged from VG-1 steel , surrounded by layers of softer steel that intertwine in a delicate damask pattern.
VG-1 or V Gold 1 is a high carbon steel from Takefu Special Steel Company. It is comparable to AUS-8 and VG-10, except that VG-1 wears less and is more durable. VG-1 also grinds perfectly and resists rust.
Masutani has a special process in the production of knives (Rolling-Forging), with which it can achieve an extremely thin blade . The thickness of the blade largely determines the sharpness of the knife, and thin knives are also easier and faster to sharpen.
The knife has a classic western handle (yo-style), so it will fit perfectly in both palms.
The knife therefore offers incredible quality and performance, and after the first sharpening it will develop to its full potential. It is suitable for buying the first Japanese kitchen knife, but it can also be a wonderful gift.
