Hello everyone, First post on the forum but I've read quite a lot of posts. If I'm not mistaken I haven't seen anything about the Matsubara Blue #2 KS profile though. Could be wrong! Some background about me : I'm a 25 year old Frenchman living in the east of France. I'm a young cook but a dedicated one. I own some German knives (if only I had known about Japanese knives before that...) and some Japanese knives (a ginga gyuto, kanehide gyuto, a takamura migaki petty, some Fujiwaras). I also own whetstones and a strop to keep them sharp. I'm now looking for a longer gyuto ~240/250mm and I'm really interested in a flatter profile like the masomoto ks but let's be serious I'm not getting one. I'd like to have your opinion on the knife itself or other recommendations you might have. Thank you all.
