First post on the forum but I've read quite a lot of posts. If I'm not mistaken I haven't seen anything about the Matsubara Blue #2 KS profile though. Could be wrong!
Some background about me : I'm a 25 year old Frenchman living in the east of France. I'm a young cook but a dedicated one. I own some German knives (if only I had known about Japanese knives before that...) and some Japanese knives (a ginga gyuto, kanehide gyuto, a takamura migaki petty, some Fujiwaras).
I also own whetstones and a strop to keep them sharp.
I'm now looking for a longer gyuto ~240/250mm and I'm really interested in a flatter profile like the masomoto ks but let's be serious I'm not getting one.
I'd like to have your opinion on the knife itself or other recommendations you might have.
