Probably going to regret this one and others I’ve sold in the past year or so, but that’s life. Adulting comes first.
This is a brand new mazaki blue 2 hon-sanmai gyuto from the very first batch that came to K&S. I had plans for this one eventually, but now it will go to someone else! It has an ebony handle that’s on the larger side most likely to balance the knife out. I’ll weigh it if someone is interested. My replacement scale is going to be delivered tomorrow most likely. Edge length is 240mm and the heel height is 53mm. Very aggressive distal taper and a sweet choil. This is an older profile from mazaki and not the newer one. Knife has never been used.
Next up is a kochi 270 blue gyuto. Also cladded in iron. Bought this one to be an everyday workhorse in the kitchen. Just tired of iron cladding. Moved to all stainless or stainless clad. Sharpened this one once. There are some light scratches here and there just from being in a pro kitchen for a couple weeks. Nothing crazy at all. Normal stuff. This is such an awesome knife. Great grind, steel takes and holds a great edge, nice taper. Tip work is great and the knife is on the lighter side. Being on the lighter side, it makes for a great long prep session knife. The handle is super nice. I really wish they had these in stainless/blue because I would order one in a heartbeat. Iron is pretty reactive. Nothing out of the ordinary. 275mm edge length and 54mm heel height.
