I bought this knife from a member a few weeks back. I wanted to try out this maker, I used it for 2 services and prep. I wanted to like this knife more, but the grind just doesn't fit my cutting style and is not as comfortable for me to use at work as some of my other knives. The design is rustic, and the handle is beautiful, and I expect will only gain more character as time goes on. The knife is more reactive than I was expecting; it has been very humid here the past week and though the blade was fully dry my thumbprint caused some rust. I have removed the rust forming at this spot, but it has scratched the patina formed (see picture). I think it will be best for me to allow the next user to fix that as they see I don't want to ruin the patina/finish. I'm throwing out the rust eraser, should have tried something else.
Mild carbon steel clad, tungsten carbon steel core, integral construction, bustard box handle
53 mm Height
237 mm length
245 gr
Asking for what I paid,$600 $585 $565 $535 $500 USD CONUS includes shipping and fees. The knife was purchased by the original owner for twice the asking price, I believe the knife is worth more, but I can't for the life of me ask for more than what I paid.
Also open to trades, I am looking for Mizuno KS Gyutos, and Carbon steel knives made by western makers. Estimated trade value ($650)
